Healthy summer treats

Stay cool (and healthy) in the heat with these yummy summer drinks and iced lolly recipes

Stay cool and satisfied with these ideal summer recipes from cook, Mira Manek (www.miramanek.com/blog/). Using only THREE ingredients, a blender and some ice, you can quite easily make these delicious blends for a picnic, barbeque or a summer dinner party. Each one so distinctive, flavourful and indulgent, using three cooling and warming spices – in a matter of seconds. 

The temptation to indulge in a sugar coated calorific ice cream is hard to ignore but Mira has also saved the day with her homemade Chai Popsicles. With an easy-to-make recipe, an aroma of cinnamon spice and the divine combination of yoghurt and honey, this recipe will make your summers day just sweet enough. Prepare these iced dreams for a BBQ over the weekend or a relaxing garden party – your guests will not be disappointed! As it contains no refined sugar and only uses coconut sugar, you can wave goodbye to the calories and feel less guilty of indulging in a sugar-ridden ice-cream – make a Chai Popsicle instead and it’ll be the only way you’ll be feeling incredibly light and cool for a little summer decadence.

CINNAMON ICED LATTE

400ml almond milk

½ teaspoon Ceylon cinnamon

3 x dates

FENNEL ICED TEA

Fennel is used to treat anaemia, indigestion, flatulence, constipation, colic, diarrhoea, respiratory disorders, menstrual disorders, and can benefit eye health)

400ml almond milk

3 x teaspoons fennel seeds

3 x dates

 

SAFFRON ICED TEA

(Health benefits of Saffron: Vitamin rich Saffron contains important antioxidants that help protect the human body from oxidant-induced stress, cancers, infections and promotes overall well-being of the body. Saffron also works wonders for hair and skin)

400ml almond milk

A pinch of saffron

3 x dates

CHAI POPSICLES

Makes 4-6 ice pops (depending on size)

For the Chai mixture:
2 x tea bags, English breakfast tea
250ml almond milk

1 x tablespoon grated ginger
35 grams coconut sugar
¼ teaspoon cinnamon
¼ teaspoon cardamom power

For the Yoghurt mixture:
4 x tablespoons Greek yohgurt
2 x tablespoon honey

Boil together all the ingredients for the chai mix in a pan and once boiled, strain into a bowl or jug and let it cool down. Next mix together the yogurt and honey in a separate bowl. Once the chai has cooled down completely, sprinkle a little cinnamon into the popsicle mould, then pour 1 tablespoon or less of the yoghurt and honey mix into the mould, and then pour the cooled chai mixture into each mould. Lastly place the stick into the mixture and leave in the freezer until solid – 3 hours or overnight.
